Private instruction

Private instruction can be something as simple as learning how to make vegetable soup to as involved as preparing a full meal. Let's work together to come up with a perfect class or demonstration for you.

This is a sample menu from a private class I taught a few weeks ago. For $75 per person, I worked up a Middle Eastern menu for a young couple who are "adventurous vegetarians."

An Eastern Mediterranean light supper

Skillet-baked fresh pita
We will make authentic, Middle-Eastern pita from scratch. We’ll mix, knead, let rise, cut and roll out a dozen or so.

Falafel-spiced tomatoes and chickpeas
We will break down the flavor profile of falafel and make a spice blend of coriander, cumin, sumac, fenugreek, Aleppo pepper and coarse salt. We’ll then take the flavor of falafel and add it to sliced, fresh tomato and a deconstructed hummus of mashed chickpeas and shallots. We’ll talk about the roles of the individual spices and how they interact together into a coherent and cohesive whole.

Muhammara is common condiment and spread across North Africa and the Middle East. Muhammara combines roasted red peppers, walnuts, garlic and pomegranate in a puree that’s a great example of how to take the hidden sweetness in elements like peppers and walnuts and bring it to the foreground.

Red lentil soup is a recipe I’ve been working on for the last few years and by combining something somewhat bland but protein-rich like lentils with subtle hints of lemon, tomato and cumin to arrive at a pureed soup that’s anything but bland. Achiote, a primarily Latin spice, makes an appearance to illustrate the importance of color in food.
